Il a pass\u00e9 son enfance \u00e0 Pourrain dans une famille de paysans. Il aime la vie \u00e0 la campagne, d\u00e9couvre l&rsquo;\u00e9levage, la culture des c\u00e9r\u00e9ales et les arbres fruitiers). Ce mode de vie simple et authentique l&rsquo;am\u00e8ne \u00e0 appr\u00e9cier les produits de la terre, frais et sains.<\/p>\n<p style=\"text-align: justify;\">Apr\u00e8s avoir fr\u00e9quent\u00e9 le lyc\u00e9e de Toucy, il entame un apprentissage en h\u00f4tellerie-restauration \u00e0 l&rsquo;h\u00f4tel de Seignelay, \u00e0 Auxerre, o\u00f9 il pratique la cuisine, d\u00e9couvre la p\u00e2tisserie, le service et l\u2019\u0153nologie. Apr\u00e8s son service militaire (dans l&rsquo;artillerie), Francis SALAMOLARD se retrouve \u00e0 Paris pour parfaire sa formation de cuisinier, chez . Ensuite, il poursuivra ses stages en se rendant \u00e0 l\u2019\u00e9tranger (au \u00ab\u00a0White Hart\u00a0\u00bb sur les bords de la Tamise, \u00a0en Allemagne et aux \u00a0Pays Bas).<\/p>\n<div class=\"sc_fancy_player_container\"><audio class=\"wp-audio-shortcode\" id=\"audio-285-1\" preload=\"none\" style=\"width: 100%;\" controls=\"controls\"><source type=\"audio\/mpeg\" src=\"http:\/\/www.yannickpetit.fr\/blvy\/b\/audio\/20160913.mp3?_=1\" \/><a href=\"http:\/\/www.yannickpetit.fr\/blvy\/b\/audio\/20160913.mp3\">http:\/\/www.yannickpetit.fr\/blvy\/b\/audio\/20160913.mp3<\/a><\/audio><\/div>\n<p>&nbsp;<\/p>\n<p style=\"text-align: justify;\"><strong>L&rsquo;Auberge de l&rsquo;\u00c2tre<\/strong> (aux Lavaults, hameau de Quarr\u00e9-les-Tombes) tenue par Michel Vignaud le s\u00e9duit et Francis SALAMOLARD d\u00e9cide de la reprendre fin 1985, d&rsquo;agrandir et de r\u00e9nover les lieux en 1992. L&rsquo;aventure d\u00e9bute. En 1996, une Etoile au guide Michelin vient r\u00e9compenser les efforts d&rsquo;un cuisinier talentueux.<\/p>\n<p style=\"text-align: justify;\">Les champignons sont l&rsquo;\u00e9tendard de la maison; il les a d\u00e9couverts lors de se stages aux Pr\u00e9s fleuris, en Savoie, non loin d&rsquo;\u00c9vian. Francis SALAMOLARD aime d\u00e9cliner \u00ab\u00a0<em>une cuisine de cueillettes, de terroir et de passion<\/em>\u00ab\u00a0, en complicit\u00e9 avec une bonne cave (800 r\u00e9f\u00e9rences \u00e0 l&rsquo;Auberge de l&rsquo;\u00c2tre).<\/p>\n<p style=\"text-align: justify;\">Ferm\u00e9 depuis dix ans, l&rsquo;H\u00f4tel du Nord, \u00e0 Quarr\u00e9 les Tombes, int\u00e9resse Francis qui l&rsquo;acquiert. Entre 2001 et 2003, les travaux autour de la r\u00e9habilitation de cet \u00e9tablissement h\u00f4telier feront travailler 17 entreprises locales. L&rsquo;op\u00e9ration est rendue possible gr\u00e2ce \u00e0 un actionnariat populaire local qui a permis de constituer un capital de 490 000 euros pour ouvrir, en juillet 2003, l&rsquo;H\u00f4tel du Nord et son restaurant \u00ab\u00a0Le Saint Georges\u00a0\u00bb.<\/p>\n<p style=\"text-align: justify;\">Fier de pr\u00e9ciser que 25 apprentis en salle et en cuisine ont, depuis 30 ans, \u00e9t\u00e9 form\u00e9s \u00e0 l&rsquo;Auberge de l&rsquo;\u00c2tre, Francis SALAMOLARD n&rsquo;\u00e9prouve aujourd&rsquo;hui ni lassitude, ni d\u00e9couragement : \u00ab\u00a0<em>Travailler, c&rsquo;est la passion et un plaisir.
